Mince Pie Recipe

Christmas is here, The Great British Bake Off has finished and our hands can finally stop twitching from longing to bake. 


It is the festive season where everyone has been pinning ideas to make those extravagant ginger bread houses, elegant Christmas cakes and deluxe chocolate logs. Whilst you may wish to impress your guests with an over the top Ginger bread house with little gingerbread men replicating each family member… sometimes it is the simple delicious treats which make the festive season sparkle. For many of us (particularly a big bearded man in a red and white suit), a mince pie is the perfect partner in crime to that delicious glass of mulled wine. They are easy to make and the perfect way to get you in the Christmas spirit. 


Filling melt-in-the-mouth pastry with delicious fruity mince meat, Paul Hollywood’s home recipe is a personal second favourite of mine (Luke Evans Bakery obviously being first). Crumbing together soft flour and melted butter, mixed with sweet sugar and eggs to make the mouth watering pastry, mix deliciously fruity mince meat with the zest of an orange and apple to spoon into the pastry bases, then bake until perfection before dusting with sugar over those golden brown crusty tops, allowing it to cool for 20 minutes! 


…However, if you don’t fancy the stress of going to the shops and the hassle of washing those overly baked muffin trays and sticky mixing bowl, there is a very lovely shop run by some very lovely shop elves who will happily not tell a soul where you got your mince pies from.
